This irresistible vegetable pie surely will take longer time to prepare but the end result will be just yum. I love British style recipes and being vegetarian, had to replace many ingredients you usually find in a shepherd pie. This recipe has plenty of veggies and though preparation takes a long time, but the procedure is simple enough. If your refrigerator is stocked with a lot of vegetables and if you are in a mood to bake, then do try this recipe. I have not used much spices in this recipe but surely you can modify it and suit your taste buds.
Spinach – 1 bunch
Onion – 2
Carrot – 2 medium
Green Beans – 250 gms
Potato – 1 big
Green peas – Half cup
Corn niblets – Half Cup
Sweet potato – 500 gms
Basil powder (optional)
Preheat oven to 200 deg Centigrade.
Take a sauce pan, heat 2 tbsp of oil. As oil heats add chopped onions. As onions turns translucent add carrot, green beans, potato, green peas (I used frozen peas), and corn niblets one after the other. Add little salt and pepper and cook till al dente (veggies should be neither crunchy nor soft).
Blanch spinach with enough water and little salt.
Pressure cook brown grams or brown lentil with little salt. Don’t overcook it.
Boil sweet potatoes. Mash it and add bit of salt, pepper and garlic powder to it.
Now lightly grease the baking dish. Add the cooked brown lentils or brown gram as the bottom layer. Spread the vegetable mixture over this. Sprinkle little salt, pepper, garlic powder and basil powder over this. Now spread mashed sweet potato on this and bake for 20 to 30 minutes. You can also grate some cheese over this and bake. Serve hot.
